Trying something new - The Lone Squash Warrior | Spaghetti Squash

I was excited but skeptical at first. All I could think about was the whipped squash my grandmother used to make at Sunday dinners. It was a pinch your nose and get it down kind of dish. Yuck!

I have seen Spaghetti Squash many times before on web sits and TV shows but never tried it. When I have come across it at the market it is in such close proximity to the pumpkins that I have always just passed on by. I love the fall scents with pumpkin - Pumpkin Spice, Pumpkin Caramel, Pumpkin Latte...but never really caught on with the whole EATING pumpkin part. I love Butternut Squash soup but that's about where my squash love ends...until now.

How to cook spaghetti squash

I was making pasta for the family last night and needed an alternative for myself.

The first challenge was which one to buy. They have small ones and they have HUGE ones. I was pretty sure I would be a lone squash warrior on this first attempt so I went with a small one - about six inches across.

The next challenge was to get it open!! It took a bit of convincing and a few trials with different knives to finally get it open. In the end it took starting the cut with a pairing knife of all things then taking our big kitchen knife to finish the cut in a big finale, pushing down with such force that one half went flying off the counter. Fortunately, my mother was watching me with great amusement and caught the rocketing gourd.

I decided to cook it two ways to see if I preferred it one way over the other. I microwaved one half for 7 minutes and let stand for about 5 minutes. The other half I cooked for about 40 minutes at 375 degrees.  I have wrapped it and will have it today but I suspect that it's not going to taste very different from the microwaved one.

I pulled a fork through it to get the stringy, pasta look and topped it with the same meat sauce that my family used on their pasta and added a big leafy salad with it.

Can I tell you? IT WAS SO DELICIOUS!!! Not "squashy" at all. So good. I actually feel like I have been missing out on something all this time!

So the point is, if you have been thinking about trying Spaghetti it. I tried it for dietary reasons but now I will eat it because I really enjoyed it.
