The Buddha Bowl

BUDDHA BOWL RECIPE

I was putting my lunch together and my son noticed that I was taking a little bit longer than usual. He said "that must be an Instagram worthy lunch you're making".

He wasn't wrong.

I didn't realize when I started but as it came together I thought this was too beautiful not to share. Personally, I love a good Buddha bowl. You can make a:

  • Rice bowl
  • Potato bowl
  • Quinoa bowl
  • Noodle bowl
  • Acai bowl
  • Salad bowl
  • Chai pudding bowl
  • Veggie bowl
  • Smoothie bowl
  • Bean bowl
  • Rice and Bean bowl

Naturally, I focus on the plant based variety but there are so many combinations to try. Literally endless possibilities. Most of which can have it's parts prepped ahead of time so that each day you just pile on what suits your fancy at the moment. This one was inspired by some roasted beets I had make the night before.

WHAT'S IN IT

Romaine lettuce
Roasted beets
Celery
Cremini mushrooms
Bell pepper
Tomato
Avocado
Cucumber
Lemon
Roasted beet hummus
Pumpkin seeds
Hemp Hearts
Chia seeds
Black pepper
Nuts

HOW YOU DO IT

Start with a bed of whatever your base is. For this bowl, it's romaine lettuce.
Once you have your base down, top with a variety of colourful and flavour filled toppings!
