I am in LOVE with this lion.

The cake is vanilla on the bottom tier and chocolate on the top. The cake is covered in butterceam and then fondant and all of the decorations including the lion cake topper is also made of fondant!

Buttercream Icing | Family favourite recipe + Easy to make

My family's favourite buttercream icing recipe. Just four ingredients and so easy to make. You can use the recipe for frosting a cake or cupcakes and can be used on it's own or under fondant.

  • 1 lb butter, softened to room temperature (approximately 2 cups)
  • 2 teaspoons vanilla
  • 4 tablespoons milk
  • 1 kg bag confectioners sugar (approximately 2lb or 8 cups)
You will also need a stand or hand mixer to make this a lot easier. You can, however, roll up your sleeves and use good ole fashioned muscle power and mix by hand! Consider it arm day :)

  1. Place the softened butter into the bowl. Using the paddle attachment or hand mixer, whip the butter slightly.
  2. Add vanilla and milk on low speed, mix until combined.
  3. Scrape down the bowl and put the mixer on low speed.
  4. Slowly add the sugar, no more than a cup at a time.
  5. Once all of the sugar is incorporated into the mixture put the mixture on high and whip until the icing is a light and fluffy texture.
  6. If necessary, you can add more icing sugar and milk until the desired texture is achieved.

Store in an airtight container. If refrigerating the icing before use, bring back to room temperature and give it a stir before using so that it is easy to spread.

A Pikachu Cake

Are you one...are you two...are you three....

With the whole Pokemon Go craze and the recent release of the Sun and Moon games, of course he wanted a Pikachu cake! It was my own fault really. I asked the loaded question...Hey Ari, what kind of cake do you want? I mean, come on, you can't ask an almost six year old a question like that and then say no. Actually, if his mom had her way he would have been twirling and coming out of a split-open Pokeball with lights and buttercream explosions. Settle down now.

November is a very busy month for celebrating in our family. We have four birthdays and our wedding anniversary smack in the middle of Thanksgiving, Halloween and the holiday season. We pretty much go non-stop from October to New Years.

This year, little missy wanted to take sixty cupcakes to school to share with her friends. Of course with allergy concerns in schools, we made them dairy and nut free. I already have a dairy free, vegan buttercream recipe that is very easy to make so it was just a matter of tweaking the batter. When I make chocolate cake form scratch, I use a recipe that I have had for years, from forever ago but it has milk in it. I just swapped out the milk for soy and we had a safe chocolatey treat for the kids.

One of the most frequent questions I have been getting is if I can make a cake that is dairy free.

My short answer is yes.

Okay, there is no long answer. Yes. Absolutely. No problem. Most fondant is vegan and cake recipes are fairly easy to manipulate. But the thing that gets everyone is the buttercream. Maybe it's the butter in the name. Maybe.

Making the icing dairy free is the easiest part of the whole thing.

My daughter Nicole has some pretty great ideas. Her latest request was for me to make some sugar cookies for her girlfriend's 8th birthday. 

Her friend is in fact 32 BUT was born on Feb 29th. So, a leap baby. Thus making her 8. If you're being silly. And silly is good.

It started as a Princess and the Leap Frog theme but quickly got out of control, in a fun and quirky way of course, which led to shamrocks and gold crowns being added to the mix. 

The lesson here is this. You can do whatever you want with a party or event. In fact, the more creative...the better :)
