One of the most frequent questions I have been getting is if I can make a cake that is dairy free.
My short answer is yes.
Okay, there is no long answer. Yes. Absolutely. No problem. Most fondant is vegan and cake recipes are fairly easy to manipulate. But the thing that gets everyone is the buttercream. Maybe it's the butter in the name. Maybe.
Making the icing dairy free is the easiest part of the whole thing.
WHAT YOU NEED
1/2 cup shortening
1/2 cup vegan butter
1 teaspoon vanilla extract
4 cups icing sugar
2 tablespoons almond milk or any other plant based milks like soy, oat or rice
HOW YOU DO IT
Cream the shortening and butter with an electric mixer or stand mixer.
Add vanilla and milk.
Slowly add icing sugar.
Beat until smooth.
Store in an airtight container, in the refrigerator.
NOTE - if your buttercream is too thick add small amounts of milk until you get the desired consistency.
